La Fheile Brighid ~ Brigid's Feast Day
Annual Celtic Community Feast

Sunday February 1st, 2009 at 6pm

Brigid continues to be revered at wells and springs throughout Scotland and Ireland. This event coincides with the celebration that will be held in Ireland on this same day and has been since before medieval times.








Harpers Janet Naylor and Flautist Meg Graf will perform throughout the evening, stories of Brigid will be told and a bit of the traditional ceremony will be shared.





Our Chef will be Clive Wanstall, the Certified Executive Chef of Lane Community College's culinary arts program preparing a culturally significant feasting fare.

The Menu is composed by Chef Clive Wanstall and Heather Nic an Fhleisdeir, utilizing food references from Celtic poetry, legend and song. The feast will be prepared by students and alumni of Lane Community Colleges nationally accredited culinary arts program. Our menu is a combination of classical and modern cooking techniques, featuring elements of Irish Celtic culture. Within the concepts of Celtic cuisine there are structures and styles, which we have used to illustrate the philosophy of food as nourishment for both the mind and body.

 

The Menu
Nettle Bisque
A delicate puree soup with natural chicken broth,
Nettle tops, soured cream and chives
 

 


Followed by

Kelp Wrapped Salmon Parcel
Filet of wild salmon encased in leaves of leek and kelp,
poached in Heather Ale

And

Pepper Encrusted Lamb in Wild Mushroom Sauce
Rolled with crushed pink peppercorns, fresh sage and garlic,
braised with locally foraged fungi and currants

The main course is accompanied with

Colcannon
The classic dish of potatoes, kale, scallions and butter

Roasted winter vegetables
with fresh thyme and more butter!

Served warm with hazelnut apple compote and a dollop of spiced cream

Beverages
Fresh Herbal Teas
Sparkling Apple Cider

 

 

 

 

Please participate in the candle lit, elegant and festive environment and give honour to Brigid by wearing a choice of the traditional holiday colors of medium blue, white, ivory or pale yellow to the feast.
