---------- Recipe via UNREGISTERED Meal-Master (tm) v8.01 Title: Zucchini Nut Bread Categories: Breads Yield: 1 servings 3 c Sifted flour 1 1/2 c Sugar 1 1/2 t Cinnamon 1 c Oil or melted butter 1 x Dash nutmeg 1 T Vanilla 1 x Dash cloves 2 ea Eggs (or 3) 1 t Baking soda 2 c Zucchini (shredded) 1 t Salt 1 c Walnuts (chopped) 1/4 t Baking powder 1/4 c Plain yogurt (if desired) 1. In large bowl, beat sugar, oil, eggs, vanilla, and yogurt. 2. Combine dry ingredients in sifter and sift over sugar mixture. With wooden spoon, stir in dry ingredients until well blended. 3. Stir in zucchini and walnuts 4. Pour into well greased pans and bake at 350 1 hour & 10 min or until brown. 5. Cool in pans 10 min. Remove and let cool on racks. Wrap in foil and let sit overnight. Makes= 1 9x5x3 loaf + 1 mini-loaf or = 1 8x4-1/2x3 loaf + 2 mini-loaves -----
